Fantastic Friday

Hello.  It is a sunny, but windy day here today.

Today was Rodeo Day at Bri's Pre-K.  She wore her cowboy boots, jeans, Jessie shirt, and vest.  She looked really cute.

Hubby and I went to Panera for lunch.  We discovered a new grocery store call HEB.  It is really huge.  There is a coffee section that is unbelieveable.  There is a huge section of organics.  We walked around for almost 45 minutes.  I got a huge pork tenderloin.  It was 8 lbs.  I gave 11.00 dollars for it.  Boneless.  I got chicken quarters, dollar a pound.  They are seasoned.  All I have to do is pop them in the oven.  A really nice fruit and veggie section.  It is in a plaza that has a Lowe's, Kohls, Super Target, TJ MAXX, Palais Royale, etc.  It is about a 30 minute drive.

Almost finished with my project.  I'll post pictures after it is done.

Sunny Thursday

Good Afternoon.  I didn't sleep well as I battled my headache until into the evening.  I get hormone fed migraines.  Yikes.

I uncovered my plants this morning.  We had quite a frost last night.  I lost one lettuce plant.  So that isn't so bad.   Everything else looks good.  I am dreaming of fresh tomatoes!! 

Hubby washed my truck this morning.  Yes, it is a 2009 Dodge Ram with a Hemi.  I get lots of looks on the highway.  I didn't know this was such a big deal.  I love it.  It is my first (and last) new truck.  Actually it is Hubby and mine.  But he calls it mine.  :)  I love the color.

Well, I have chores to get caught up with and dinner to get going.  Have a great day.

Over the hump day.

Well, we got away with a light sleet/rain mix.  I am so happy.  I only lost one lettuce plant.  But it is going to dip below 32 tonight.  So I will be covering.  Then it will be 60 by tomorrow afternoon.  Talk about a roller coaster.

Battling a headache today.  Was lazy and let hubby take Bri to school.  Ended up watching Joyce Meyers.  I love her.  Her message was money today.  If you haven't watched her, please do.  She is a wonderful teacher and preacher.  Very down to earth. 

I got tons of stuff organized and put away yesterday.  It is difficult to get organized when stuff still isn't unpacked.  I don't care to live with plastic tubs everywhere.  I thought that I got rid of tons of stuff before we moved.  But we have our bedroom, a bathroom, Bri's room and a shared loft area.  I am very grateful that my sister in law opened her house to us.  But I still feel strange putting stuff around someone else's home.

Tuesday Tales

Hello.  Can you believe that we are under a winter storm warning????  I thought that I moved to Texas to get out of the yucky winter weather.

Here is a recipe for those who aren't eating meat for Lent.

Crunchy Tuna Casserole:

2 10.75 oz cans of cream of mushroom soup
1/2 cup water
2 6oz cans of tuna
1 cup cashew pieces
2 cups finely diced green peppers
1/2 cup shredded cheddar
4 chopped pimientos
1 cup chow mein noodles

Combine all but noodles and put in a buttered 9X13 pan.
Top with noodles
Bake at 325 for 40 minutes.

For the kids to make:

1 can cream of celery soup
1 can cream of mushroom soup
2 cups uncooked rice
1 cup milk
1 cup sour cream
8 pork chops

Mix soups, rice, milk, and sour cream and pour into a buttered 9X13 pan.  Place pork chops on top.
Cover and bake at 350 for 45-60 minutes.

Surprize Pizza Pie:

1 1/2 lbs ground beef
3/4 teaspoon pepper
1 1/2 cups well-drained canned tomatoes
3 T chopped parsley
3/8  teaspoon dried basil
1 1/2 teaspoon garlic powder
3 T chopped onion
1/4 teaspoon oregano
3/4 cup shredded Mozzarella

Mix beef with salt and pepper.  Pat out in a 9 inch pie pan.
Spread drained tomatoes over meat and sprinkle with remaining ingredients.
Bake at 375 for 20 minutes.
Cut into wedges and serve.

You can also put on pepperoni, green peppers, onions, etc

A cloudy and chilly Monday

Hello.  Good afternoon.  I haven't posted since Thursday.  I had to go to the doctor's on Friday.  Her office is in downtown Houston on the other side of town.  So I had an exciting trip down I10 to 59 south.  This is the first time that I have driven downtown. Yikes!!! 

Bri kept me busy all weekend.  Plus I put in some lettuce and herbs.  It is strange to be planting now.  But that is what the seed packs and plant packs said.  I am sure that I will be covering the plants a few times.  It was good to get my hands in the dirt. 

We went to lunch yesterday and there was a street fair set up in the mall parking lot.  We bought enough tickets so that Bri could ride all the kiddie rides.  She had the time of her life.  I don't usually spend money like that.  I blew $20 on ride tickets.  But it was worth every penny watching her face light up.  She told me this morning on the way to school that she dreamed that she went back and rode the rides again.  And she said she dreamed she was big enough to ride the big rides.  I had to laugh at that.  They weren't very crowded, so they let her ride extra long.  So I am sure that is up there on the great day list!!!

I got my plants and George got a few new items for his tanks.  Bri also got strawberry plants, two watermelon cups, two sunflower cups, and a Veggie Tales flower garden.  She can't wait to eat her berries.

Beautiful sunny morning

It is sunny and beautiful here this morning.  But chilly.  We hope to see the upper 50's or low 60's this afternoon.  Bri got to play outside a school yesterday and we took her to the park after school.  So she was happy.  She needs to run out some of that extra energy.

Not much on the list today.  Job work, laundry, cleaning, and dinner.  Not sure what I am making for dinner today.  I think George put steaks in the refrig to thaw. 

Been pouring thru the seed catalogs.  I can't wait to try out this new zone.  I am a huge gardening fan.  I will miss the great compost provided by our rabbits we had in Ohio.  Did wonders for my roses.  It will be containers here.  It will be a test to see how creative I am.

Do you hang out your clothes?  I did in Ohio.  But here in this development where we are staying, you aren't allowed to have a clothes line.  Isn't this the dumbest thing you have ever heard???  There are stray dogs running around everywhere, but we will get fined for a clothesline.  I will be glad when we get our feet on the ground and look for a place.  No clotheslines.  It just is silly.

Here is a recipe:

Easy Lemoney Chicken

Season and saute boneless chicken breasts.  When done, set aside.  Add lemon juice and chicken broth to skillet and boil until slightly thickened and add a bit of butter.  Add chicken and warm.  Turn to coat the chicken with the sauce.  Great with rice or noodles.

Over the hump day.

Good Morning.  I am doing better today.  Just can't sit too long.  It is funny, I truly have a pain in the butt!!!

Getting ready to go to Ladies Circle and Lunch Bunch at the church today.  I've missed the last two, so I am very lost.  They are still going thru Joshua.

Is is beautiful and sunny here today.  But not out of the 30's.

What is your favorite meal?

Mine is a nice pot roast, potatoes, carrots, and gravy.  Or Corned Beef, carrots, and red potatoes.

What is yours?

Here is a quick recipe:

1 cup sugar
1 cup corn syrup
1/2 cup peanut butter
5 cups crisp rice cereal or cereal of your choice (Honey nut Cheerio's are good too)
2 cups pretzel sticks, broken up
1 cup mini M&M's
1 cup mini chocolate chips if desired

In a large bowl, combine the sugar and syrup.  Microwave on high 2 minutes or sugar is dissolved.  Stir in peanut butter until blended.  Add all the other ingredients and stir until coated.  Press into a buttered 13 x 9 inch glass pan.  Cut into bars.  Chill.

This is a remake of the peanut butter bars we use to be able to buy in junior high and high school lunch rooms.  Do you remember these?  They were made with corn flakes.

Tuesday Tales

Good Morning!  How is everyone today?  We are well.

Got a beautiful gift from my sister in law yesterday.  Actually, I opened it this morning.  I love teapots and pansies and she got me a teapot with pansies.  It is so pretty.  Pictures to follow.

I am not feeling well.  I have sciatica in both legs.  (Pain from buttocks to my knees)  So I can't sit long.  I guess you can say my butt is on fire!!!!  LOL

I also took a picture of the candle holder in our dining room.  Isn't it Texas?

Here is a quick recipe:

Cook and drain your favorite pasta.  Slice and saute your favorite veggies.  Add a splash of wine or chicken broth and let it reduce.  Add the pasta, herbs, and Parmesan cheese and enjoy.

Try zucchini and summer squash, tomatoes and onion, eggplant and mushrooms.  You can toss in cooked chicken.  Use different cheeses.

Fantastic Friday

Good Morning!!  It is gloomy and chilly here again this morning.  Saw a few snow flakes.  We are right around freezing.  But we didn't get the mess that they had in Dallas. 

I was unpacking a few more boxes and found the sampler I made for George in 1999.  This was his Valentine's gift back then.  The pics aren't really great.  But you get the idea.  I need to get it framed now that I found it.  Yikes, can you believe it is eleven years old? 

Bri was excited to go to school and her Valentine's party today.  I was surprized, she made almost all of her Valentines before she got "tired".  She put on red tights, a red skort with bubble gum pink hearts, and a pink shirt with a sequins heart.   Target has cute seasonal stuff.  Her Aunt Linda got these for her when we were out on Sunday.

Bri and I signed up to take the treats to church on Sunday.  My Mom sent Eat and Park smiley face cookies for Bri's class.  But they didn't make it here yet.  With the weather and all.  So we are going to take those and I am going to make pumpkin bread.  We got a boxed mix a Sam's club.

Over the hump day.

Good soggy morning!!  I am not complaining because it isn't snowing up to our eyes!!

I am going to be glueing dollies to cards so Bri can put on stickers and make her Valentines.  I bet that she gets about six done and decides that she doesn't want to do anymore.  I guess that is what you get from a five year old.  She spilled a half of a bottle of water in my truck this morning.  Great way to start the day. Grrrrr.  I asked her why she didn't grab it when it tipped.  She just looked at me and said I don't know. Grrrrr again.  Thank God she is so cute!!!!  I told her that I was banning drinks in my truck.  I told her I was going to buy her sippy cups again.  She looks at me sweetly and says that she would like Dora ones.  I can't win.

Have to go to the grocery store today also.  Have to get cupcakes.  Bri didn't want to help make them, she wanted the cute store bought ones.  So I said fine.  Less dishes to wash.  Made a fantastic pot roast the other day.  Cooked it low.  The whole house smelled so good.  I want to make a meatloaf and pork chops with gravy and mashed potatoes.  Do you make your meatloaf with gravy?  My Mom did.  My hubby doesn't care for it that way.  I add onions, peppers, and spagetti sauce.

What is your favorite meal?

I love corned beef with carrots and red potatoes.  Can you tell I have Irish blood? 

What is your hubby's favorite meal?

Meatloaf with mashed potatoes, green beans, and homemade bread.

Are your kids picky?

My Bri isn't.  She'll eat most anything.  Her favorites are green beans and lima beans.  When she was smaller, I put baby lima beans and fruit bits on her tray.  She threw the fruit bits on the floor and ate the lima beans.  She would rather go to the veggies or fruit than the candy.  Thank God for that.  We try all kinds of fruit and veggies.

Special fruity pops

1 cup fresh apricots, peaches, etc
1/2 cup ice cubes
1/4 cup lemon juice
1/4 cup orange juice
4 tsp sugar (or two packs of equal or splenda)

Combine ingredients in blender.  Fill mold or cup and top with lid or insert stick.  Freeze overnight.

Banana berries smoothies

1 cup milk
1 cup orange juice
1/2 tsp vanilla
2 med bananas
1 cup applesauce
1 cup frozen berries of your choice

Blend and enjoy

Tuesday Tales

Had a sick little girl home yesterday.  Stuffed up and drippy eyes.  So I put Vicks on, gave her a shot of cold syrup, and let her watch movies and play her 'tendo.  She got presents from Daddy and Aunt Linda.  Then later I gave her a bath and gave her a full dose of night time cold and cough and let her watch "Kipper" until she crashed.  She was much better this morning.  She begged me to go to school.  So I did.

I sat on the couch and stitched up a storm almost all day yesterday.  I am working on a project for the frontpage of the Yahoo group "Stitcher's Antics."  Please join our group for stitching and just plan fun antics!!  For those of you not familar with Yahoo groups, just go to Yahoo and click on groups.  There are tons of groups for any type of hobby, interests, and such.

Easy Tasty Salmon

2 tsp minced garlic    ( I buy mine in the jar already minced)
1 tsp olive oil
1/4 cup balsamic vinegar
3 tsp dijon mustard
1 tbsp water
1 tbsp honey
1/4 tsp sea salt or lite salt
1/4 tsp fresh ground pepper
6 salmon fillets (4oz)
1 tbsp minced fresh oregano or 1 tsp dried

Line a baking pan with foil and spray with Pam.

In a saute pan, saute garlic in the oil until tender.  Stir in balsamic, mustard, water, honey, salt, and pepper.  Bring to a boil and reduce heat.  Simmer uncovered 5 minutes or until slightly thickened  Set aside 3 tbsps for basting.

Place fillets into pan with foil.  Brush with sauce and sprinkle with oregano.  Bake, uncovered 425 for 15-17 minutes, or salmon flakes easily with a fork.  Brush with reserved sauce and serve.

You can also do this in your George Foreman Grill.

Our trip to the Downtown Houston Aquarium

Good Morning.  The Morgan clan spent the day at the Aquarium yesterday.  For those who have never been to Houston, the Aquarium is right smack downtown.  It is really neat.

George was in heaven!!  For those who follow my blog, you know that he is a fish nut.  We have three salt tanks and four freshwater tanks.  Back in Ohio, we had eleven freshwater tanks.  He got into salt tanks here because the fish aren't as expensive here in Texas.

We ate lunch there.  The center is one huge tank.  It is awesome.  You have to walk around the tank.  There are sharks, turtles, rays, etc.

They have an encounter area where you can touch rays, bamboo sharks, horseshoe crabs, starfish, urchins, shrimp, etc.  It explains also what a bonus oil platforms are to sealife.  If you were to remove them, you would kill millions of sealife.  Even when oil companies are done with the platforms, they leave it for the sealife.  Very interesting.

The shark encounter is really neat.  You ride the train into a building.  When they turn the lights on, you are in a tunnel of glass with sharks swimming over and next to you.  Very neat.

They have two white tigers also.  That is really neat.  They even have sleep overs for the kids to learn more about tigers.

There is also a sealife carousel.  Bri rode it three times with her Aunt Linda.  We got the all day pass.  It allows you admission to the aquarium, the train ride, the carousel, and the huge ferris wheel.  It was a bit too chilly to ride the ferris.  That is a George and Bri deal.  Mommy doesn't care for heights.

It is a fairly inexpensive trip.  An all day pass is 15.95.  Plus for us, it is only a 15 - 20 minute drive.  Depending on the traffic. 

The lunch is more expensive than I care to pay, but it was a treat from Aunt Linda.  I had a salad and Lobster Bisque.  Bri had pizza.  George had a steak sandwich.  He can't eat seafood watching fish.  LOL
Linda had a Cajun pasta dish with shrimp.

They have dancing water jets that the kids play in when it is hot.  Bri loves that part.  She was very disappointed that it was chilly.

Fantastic Friday

Thank God!!! The sun is out today.  I am tired of the gloomy weather. 

I hope that everyone that is getting the snow storm is safe and comfy thru it all.  That is the part of not living in the North anymore that I am happy about.  But come hurricane season, I might change my mind!!

Here is another Super Bowl Sunday idea.

Super Easy Truffles

3 cups chocolate chips
1 can sweetened condensed milk
1 tablespoon vanilla

coconut, sprinkles, cocoa, chopped nuts

Microwave chips and milk until melted.  Stir until smooth.  Add vanilla.  Chill overnight.
Shape into 1 inch balls and roll into the coconut, sprinkles, cocoa, or chopped nuts.  Set on waxed paper.

Rainy Thursday

Here in south Texas it has been raining like crazy.  I heard the wind last night.  Do you sleep better when it is raining?  I know I do.  I love the sound of the raindrops tapping on the window.

My hubby and I went to Golden Corral yesterday for lunch.  Those who don't know, it is a buffet.  There was food everywhere.  I tried really hard to eat healthy.  I started out with a salad.  Then had steamed veggies with cheese sauce on the side, meatloaf, corn on the cob, and deviled eggs.  I had a small bit of brownie pudding with a little ice cream.  We went and walked after.  I love deviled eggs. 

I worked on my Bride Tree SAL ornies yesterday and my abc sampler.  I just have to finish January.  I feel wonderful to see how much I am getting done.  My TUSAL is getting stuff in it.  (See Dragon my needle in my blogs list).  I hope to get all 12 ornies done, my abc sampler, the Alphabet SAL (Cheater's SAL,  If interested, go to stitcher's antics in the Yahoo groups), EMS Flowers of the month, and my Panopoly of Posies done this year.  Quite a tall order.  Wish me luck.

Tuesday Tales

I have been so busy with work.  Thankfully, it is almost done now. 

I don't have any finishes to post.  But I am working on my Jan and Feb ornies for the Bride's Tree SAL.  (see Bride's Tree SAL in my blog list).  I got more fabric and floss at Hobby Lobby.  I am using 28 ct Monanco teastained for all the ornies.  There will be 12 in total.

I got the pattern for Panopoly of Posies (see Tempting Tangles blog in my blog list).  I made myself promise to finish the Alphabet (Cheater's) and the Bride SALs first before I start this.  I won't let myself buy the fabric either.  It will be 32 ct.

I got materials to make Valentine's with Bri.  There are 15 in her class.  I was very happy, all Valentine items were 40% off at Hobby Lobby.  I got plain pink and red cards.  I also got white and red small dollies made of paper.  Then I got stickers.  That way I don't have to cut out anything and Bri will just stick the stickers on after I glue the dollies on.  She wants to make some for her aunts, uncles, and Grammy and PopPop too.  It only cost me 15.00.  I was happy about that.  I was planning on getting scrapbook paper and cutting them, folding into cards, and then decorating them.  This will save me time and money. 

Here is a nice snack for Super Bowl Sunday or any party:

Burger Two Bites

3/4 lb ground beef
1/4 cup chopped onion
1 tablespoon pickle relish
2 cloves garlic, minced
1/2 teaspoon seasoned salt
1/2 teaspoon chili powder
1/4 teaspoon pepper
1 cup Shredded cheese of your choice
2 8oz crescent roll tubes

Cook beef, onions, and garlic in a skillet until meat is no longer pink and drain.
Mix in all other ingredients.
Unroll crescents and cut all triangles in half lengthwise. 
Put  a tablespoon of meat mixture in each triangle and roll up.
Put point side down on a cookie sheet.
Bake at 375 for 10 - 15 minutes or until golden brown.
Serve warm with ketchup, mustard, and/or BBQ sauce.
