Tuesday Tales

For all of those who asked, here is my pie crust and pie recipe:

For the crust:

Two crust 9 inch pie

2 1/2 cups flour
1/2 teaspoon salt
3/4 cup shortening
6-7 tablespoons icy cold water

Mix flour and salt.  Cut in shortening with a pastry cutter or two knives.  Combine lightly until it resembles course meal.  Sprinkle water over the flour mix a tablespoon at a time and mix with a fork.  Use only enough water so that the pastry will hold together when pressed into a ball.   Don't make it too wet.  Roll out for bottom crust first, then the top crust.


For the pie:

3/4 - 1 cup sugar
1/2 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/4 teaspoon ground ginger
1/2 teaspoon nutmeg
1 1/2 tablespoon flour
6 large tart apples    ( I love granny smith)
2 tablespoons butter

I also prick the bottom of the crust with a fork, then I put one cup of flavored applesauce.  The lunch cups that they sell for kids lunches.  I've used mango/peach, etc.

Preheat oven for 425.  Use a glass pie plate.  Put the bottom crust into the pan and prick with a fork.  Mix the sugar, salt, spices, and flour together.  Peel, core, and slice the apples.  Put the apples slices in a large bowl.  Toss them with the sugar mixture to coat.  Pile them into the pie plate.  Dot with pieces of the butter.  Put on your top crust.  If using a whole top, cut vents into the top.  I use foil around the edges until 15 minutes is left in the time.  Bake at 425 for 10 minutes, then lower the heat to 350 and bake 35 - 45 minutes until apples are tender and crust is browned.


For those of you who commented on the fish tanks, yes it is very relaxing.  Sometimes I lay on our bed and watch the fish swim around for a few minutes.  It is said that it lowers your heartrate and blood pressure.  It is even better if you turn on soft music.  I like new age or classical.  It seems like the fish are swimming to the music!!!  A nice small break during the day.
